Fresh Salsa
1-2 small-medium tomatoes
1 can of Rotel, undrained (with the green chilies in it)
2 tablespoons lime juice
1 small fresh jalapeno pepper, without seeds (adding more seeds will make it hotter!)
1/3 c. chopped fresh cilantro
1 small yellow onion
3 drops hot pepper sauce
1 clove garlic, minced
In a blender/food processor, chop each ingredient to desired consistency. Chill until ready to serve. It’s all a matter of taste, we like less cilantro and onion, and more garlic and jalapeno. If your unsure, start out with a little and add more to taste.
Mark and I love this recipe, and it costs about as much as a bottle of salsa, just a bit more effort.
